I had a major craving. Like, I would drive across town in a tornado to get this kind of craving. Yeah, it was that intense. It wasn’t a craving for wine or chocolate (but I will glad consume copious amounts of both). It wasn’t even a craving for a delicious, perfectly cooked piece of pork belly or a big, greasy slice of pizza. Nope. It was for sweet potato fries. Curry sweet potato fries to be exact.
I love, love, love sweet potatoes – I think it runs in my family. My mom and I could eat a sweet potato every day until we turn orange and still love them. They’re such a wonderfully humble little root vegetable that can be transformed and cooked every which way. I am lucky that I had bought sweet potatoes at the store last week with the very intention of making sweet potato fries and was pleasantly surprised to remember that fact after a long day of work and class.
Now this recipe isn’t really a recipe, it’s more like guidelines. Sweet potato fries are easy to make – just chop, season, toss in some olive oil, and bake to crispy perfection. And serve with a great dip like this cheater’s curry guacamole.
And yes, this is totally an acceptable thing to eat for dinner. Or any meal, really.
Curry Sweet Potato Fries with Cheater’s Curry Guacamole
Partially inspired by Joy the Baker
Yield: Enough for a single dinner with a glass of wine 🙂
1 sweet potato, julienned into fries. (See Joy the Baker’s explanation on how to do this)
1 tablespoon olive oil
1/2 teaspoon curry powder, or however much you desire
salt + pepper to taste
1. Preheat oven to 400F while you chop up your fries.
2. Line a baking sheet with parchment paper and set aside.
3. Combine all ingredients in a bowl and toss fries around to coat them in the oil and spices.
4. Bake for about 40-45 minutes or until crisp.
Play with this! Add in some fresh garlic or rosemary. You can make endless varieties of delicious, crispy sweet potato fries!
For Cheater’s Curry Guacamole:
I call this cheater’s curry guacamole because there is mayo in it! I consider all guacamole made with mayo as “cheating” – but that’s because I’m a hardcore guac snob and come from a long line of guac snobs. True story.
1/2 ripe avocado
1 tsp or so of mayo, adjust to your liking
1/4 teaspoon of cayenne, optional
1/2 teaspoon of curry powder
quick burst of lemon juice
1. Remove flesh from avocado and smash until mostly smooth in a small bowl.
2. Add mayo, cayenne, and curry powder.
3. Continue to mix until smooth and creamy.
4. Add a quick squeeze of lemon.
Serve with piping hot fries and enjoy!
